Election Day Rice Krispy Treats

Well, I’m glad that’s over. I don’t know about you, but I’ve had to have a Facebook moratorium while the criers and the gloaters get it out of their system. The only leftovers from this election that I want to talk about are these cool treats I made for the preschool snack on election day. On such a momentous occasion, we needed something bipartisan red, white and blue — and allergy free for the kiddos.

Now I didn’t expect 4 year olds to understand how important election day is, but if they can remember they got to eat red, white and blue rice krispies treats – hey that’s a fat free start to politics.

I made these as rainbow rice krispies treats last year… and lol, I swore I’d never make them again because they took so long! But the Cupcake loved them and I thought it was perfect for election day red, white, and blue snacks.

Here’s my recipe for each colored layer of rice krispies treats (when using 3 colors):red white and blue rice krispy treats

· 1 and 1/3 tablespoons of butter

· 18 large marshmallows

· 2 rounded cups of rice krispies cereal

· ½ teaspoon of vanilla

· Food coloring to your preference (I used Wilton food color gels in the jars)

Here’s what you do:

Spray your 13 x 9 pan with butter flavored PAM.

Melt your butter in a pan over low heat. And I mean low.

Once the butter is melted, add the marshmallows and food coloring.

Stir the marshmallows occasionally but not obsessively.

After there are no more lumpy marshmallows, take the pot off the heat and stir in the vanilla

Stir in the rice krispies cereal. Once it totally coated, spread it into the greased pan and let cool.

Repeat for your next colored layer of rice krispies. When doing the white layer, no gel coloring needed.

I made two batches for her class of 16 kids, and there was some left over. Thank goodness, because they really are way more fun to eat than the au natural rice krispies treats.
